Cauliflower Base BBQ Chicken Pizza

What You’ll Need:

8 oz Chicken Breast
1/4 Red Onion – chopped
Cilantro – to taste
3 Eggs
1 Head Cauliflower
1/2 Cup Almond Meal (optional)
1 Cup Greek Yogurt
1/4 Cup Fresh Chopped Oregano
Salt – to taste
Black Pepper – to taste

1 Can Pureed Tomatoes
1 Small Can Tomato Paste
Oregano – to taste
Garlic Salt – to taste
Salt – to taste
Pepper – to taste
Garlic Bulb

Prepare the Chicken:
Bake or crock pot chicken in your choice of BBQ sauce – I like Bone Sucking Sauce. Remove from the oven, or crock pot, and shred the chicken.

Make the Crust:
-Preheat oven to 350
-Food process the cauliflower until it’s “riced” or doughy. Use a cheese cloth or thin towel to squeeze all the water/moisture out.
-Combine the cauliflower, almond meal, eggs, salt, pepper, peperoncino, and oregano together.
-Place the dough on parchment paper and shape into a pizza crust with a thicker edge.
-Bake for 25 minutes.

Prepare the Sauce: Roasted Garlic Marinara Sauce
Roast garlic by slicing the bulb in half, place both sides face down in olive oil in a small dish (enough for the bottom of the bulb to soak and be completely covered.) Bake for 20 minutes at 350.
Smash the garlic in the olive oil used to roast. (If you dare, add a little sugar.)
Combine all ingredients in a saucepan and cook.

Make the Delicious Pizza:
After removing the crust from the over
-cover with sauce
-add the shredded chicken
-dollop the yogurt over the crust
-add the onions and cilantro
-bake for 10 more minutes
