10 Minute Poached Egg & Pistachio Salad


I had a few minutes after the gym to prepare lunch and this salad is what I came up with. Keep a things in mind. I eat a lot so you can probably half the portions. You can poach the eggs longer so the yolk is hard and choose not to eat it. You can substitute eggs with chicken or poached salmon. If it’s pre-prepped it will take the same amount of time.

You’ll need:
1/2 avocado cubed
1 “palm full” peeled unsalted pistachios
3 tbsp sour cherries (optional)
3 tbsp finely chopped red onions
(Pre wet chopped with the vitamix)
3 eggs – poach them with a poacher / in boiling water / or in an egg cooker

For the dressing:
2 tbsp apple cider vinegar
1 tbsp spicy mustard
1 teaspoon olive oil
Fresh ground pepper to taste


While the eggs are poaching make the dressing by combining all the ingredients in a shaker, cup, small bowl.
Toss with the spinach, add the dry ingredients, place the eggs on top.
